A long fermented yeasted bread which is made over 2 days, this longer fermentation helps break down the gluten in the flour which is more gentle on your gut and aids nutritional absorption. A great "everyday" loaf baked in a tin which makes it easy to cut up for sandwiches or pop into the toaster.
